Résumé :	The phylum mollusca is one of the largest, most diverse and important groups in the animal kingdom. There are over 50000 described species and about 30 000 of these are found in the sea. The class Bivalvia is one of six classes of molluscs and comprises animals enclosed in two shell valves. Examples are mussels, oysters, scallops and clams. Although the class contains a relatively small number of species, about 7500, it elicits substantial interest chiefly because so many of its members are eaten by people in large amounts. In 1999, production of bivalves from fisheries and aquaculture was over 10.6 million metric tons worldwide with a monetary value of over.
